What are your go-to paints? I only have Citadel currently, and can't say I'm experienced enough to say whether they are good or not. I hear a lot about P3 and their range however. I believe I will end up with a range after I practice a bit!

At the moment it's citadel, I don't think P3's all that better to be honest. Gonna order Scale75 to try out soon though, I've heard really good things about it

I actually preferred citadel (a few Range changes by gw ago) to vallejo game as far as consistency and coverage, but not enough to outweigh the gw Paint drying in the pot. Vallejo model has a lot of nicer more natural and less pastelly colors.

Vallejo Air is great for airbrush and hand painting.
Citadel is fine for hand painting, but as mentioned dries in the pots too quickly. It is also useless for airbrushing as it does not dilute well with regular airbrush thinner. It also sprays lumpy and blocks the nozzle. I also found when trying to clean my airbrush, citadel paint turns to glue with airbrush cleaner.
If you are willing to spend the money on good airbrush paints and are willing to change from acrylics, lacquers are perfect. These require well ventilated areas to spray but you can achieve very smooth results and blending. They require different primer as lacquers will melt acrylic based paints. (you can still paint acrylics on top of lacquers when they are dry) I use the Japanese brands but they are difficult to import like Mr.Color and Gaia.

Scale 75 for the most part (Although I am having troubles with their blues for some reason, they are just not the same compared to their own reds), there is a lot of Vallejo mixed in there as well, I sometimes use citadel, but now its rare.
